Rodizio dining is a Brazilian style of service where gauchos bring fire-roasted meats directly to your table. Instead of ordering one steak, guests can try several cuts throughout the meal.

What Does Rodizio Mean?

In Portuguese, rodízio refers to a rotation. At a Brazilian steakhouse, that rotation happens throughout the dining room.

Our gauchos move from table to table with skewers of freshly grilled beef, lamb, pork, and chicken. They introduce each cut, then carve your serving directly onto your plate.

The selection keeps changing, so you can compare different flavors and textures during one meal.

Is Rodizio the Same as a Buffet?

Not quite.

A buffet asks guests to serve themselves. Rodizio brings the main course to the table.

At Estância, guests can visit the Gourmet Salad Bar for salads, cheeses, Brazilian sides, and other selections. The gauchos handle the meat service separately at your table.

This combination gives you the variety of a buffet with the attention and pace of tableside service.

Can You Choose Which Meats You Want?

Yes. You never have to accept every cut.

You can take a slice when something interests you or wait for a favorite to return. If you want more Prime Picanha, fraldinha, lamb, or another selection, ask your server or gaucho.

You can also share your preferred steak temperature. The team will help find a serving that matches it when available.

How Do You Control the Pace?

A small table card lets you manage the flow of service.

Turn it to green when you are ready for more. Turn it to red when you want to pause.

Red does not mean your meal has ended. It simply gives you time to enjoy your plate, return to the Salad Bar, or take a break before the next round.
